Rural Roots partnered with Mezza to create a high-performance, food-safe processing facility capable of producing both raw meat and ready-to-eat (RTE) products under one roof. Through precise food process engineering and strategic equipment integration, we delivered an efficient, compliant, and scalable production environment that continues to evolve as Mezza grows.

Integrated Food Process Engineering for RTE Production

When Mezza expanded its operations, it required a layout that could support dual food processing environments without cross-contamination risks. Our solution focused on compliance, efficiency, and future scalability.

Our Work Included:

• Dual-Process Facility Layout: We designed a plant floor plan that ensured complete segregation of raw and RTE operations, incorporating dedicated airflow, sanitation areas, and product pathways.

• Equipment Fit-Up & Process Integration: Multiple suppliers provided specialized machinery, which we integrated into streamlined, high-efficiency processing lines, maximizing output while maintaining strict hygiene protocols.

• Scalable Infrastructure Planning: From the start, we engineered the facility to allow for additional processing lines and production areas without major operational disruption.

• Ongoing Expansion Support: Beyond the initial processing floor design, we recently helped Mezza add two new RTE production lines to upgrade its sauce and vegetable rooms. We also assisted in implementing improved waste management systems to support environmental compliance and operational efficiency.
